FLUFFY BLUEBERRY PROTEIN PANCAKES

Similar to the waffles, I use Kodiak Cakes waffle/pancake mix, add a scoop of tasteless protein, and mix the batter using almond milk. A key step here is to butter the pan prior to putting the batter on, and then to re-butter the sides of the pancakes while they are cooking to get that perfect color. Additionally, instead of stirring the blueberries in with the batter, place them on top of the batter after you have added it to your pan if you prefer them to be less oozy.
