Pierogis

“A simple, yet comforting, classic Polish dish that never fails to hit the spot are pierogis. While they can be made several ways, a basic pierogi that we love is a mashed potato and cheese filled dumpling with a soft, dense, doughy outside and the melted warm contents filling the inside. The dumplings are fried with butter and onions which are glazed over the top to plate the dish. While they are super dense and fill you up quickly, they are so warm, buttery, and easy to eat that your eyes become bigger than your stomach as you shovel more and more pierogis onto your plate. It is overall one of the best comfort foods that will leave your stomach full and dreaming of more.”

Aastha’s Thoughts

Lucky for me, I’ve been able to MAKE pierogis with my friend Jessica at her house. I got to sit with her, her mother, and her family friends for a few hours and pinch the dough into little dumplings with the filling inside. While it takes a lot of effort, doing it as a group and chatting along the way makes for a fun evening. Making pierogis with Jessica’s family reminded me of how making food together, and then enjoying that same food at the dining table is one way to bring people closer together. When I went to college last year, they served pierogis one day at the dining hall. While not as fresh as the ones made with Jessica’s family, they reminded me of the day I made pierogis with her, and all that it stood for. I can’t wait to make pierogis again!!!
