Coconut & Nut Date bites

I love these so much that I make my mother ship these to me while I’m at college! Makes for a perfect snack and are delicious and full of nutrients. I also like eating them with peanut butter :)

My mother’s recipe:

  • 1 cup dates

  • 1/4 cup whole almonds

  • 1/4 cup whole pistachios

  • Coconut flakes

  1. Cut your dates in half and sauté them with canola oil (or ghee) on medium heat for 4-5 minutes (until dates are softened and able to be molded)

  2. Turn off the gas and add almond and pistachios to the pan

  3. While the mixture is warm, make multiple cylindrical tube-like rolls using your hands

  4. Coat the rolls in coconut flakes

  5. Cover with saran-wrap and place in the fridge for 24 hours

  6. Cut rolls into small circular bite-size pieces as shown in the picture and store with parchment paper in refrigerator
