Soondubu with taylor & Fam

Soondubu-jjigae (순두부찌개)

“This is a very soft tofu stew with a bit of a kick. The ingredient gochujang, which is a chili paste, varies the spice of the stew.  I like to eat mine with a fresh cracked egg, beef, rice, and dumplings. What I really like about this dish is how customizable it is. You can vary the spice, add meat, seafood, and/or vegetables, and make it the way you want it. Because of how soft the tofu is, this stew almost melts in your mouth. This is one of my favorite Korean dishes because it reminds me of my family. Some of our fondest moments are made over sharing a meal getting soondubu. After every vacation we make it a tradition to get soondubu on our way home from the airport and it is always just like the icing on a cake after a long week away from home”. 

Aastha’s Thoughts

Another aspect of food I enjoy is its ability to foster the making of memories and traditions. I love how Taylor and her family have been able to use a specific food and make it part of a tradition after a long trip away from home. I also love how customizable soondubu is, and how there can be variations of it based on your food preferences/diet style. As a vegetarian, I hope to get to try a vegetarian soondubu, as well as to check out some other Korean foods this fall in NYC!
